Muesli and Date Muffins


  • 1 cup all-purpose flour
  • 1 cup Lion Muesli
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup melted unsalted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup plain yogurt

  1. Preheat your oven to 350°Farenheit (175°C). Set the paper liners into the muffin tin or provide a light coating of grease to the muffin cups.
  2. In other bowl, whisk together all-purpose flour, Muesli, baking powder, salt, brown sugar, and baking soda. Ensure that the ingredients are well combined.
  3. Take a separate bowl and whisk the melted butter, eggs, and vanilla extract until smooth.
  4. Combine the wet ingredients by pouring them into the bowl of dry ingredients. Gently mix them together until they are well combined. A few lumps are okay, so don't overmix.
  5. Fold in the plain yogurt until the batter is well mixed. Then, gently fold in the chopped dates, ensuring they are evenly distributed throughout the batter.
  6. Fill each muffin cup by spooning the batter, leaving approximately two-thirds of the cup full.
  7. After baking, let the muffins cool in the tin briefly before transferring them to a wire rack to cool completely. The tops should be golden brown.
  8. Once cooled, serve these Muesli and Date Muffins as a delightful breakfast treat or snack.
