Muesli and Date Muffins
Ingredients
- 1 cup all-purpose flour
- 1 cup Lion Muesli
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup melted unsalted butter
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup plain yogurt
- 1 cup Lion Delicacy Dates

Instructions
- Preheat your oven to 350°Farenheit (175°C). Set the paper liners into the muffin tin or provide a light coating of grease to the muffin cups.
- In other bowl, whisk together all-purpose flour, Muesli, baking powder, salt, brown sugar, and baking soda. Ensure that the ingredients are well combined.
- Take a separate bowl and whisk the melted butter, eggs, and vanilla extract until smooth.
- Combine the wet ingredients by pouring them into the bowl of dry ingredients. Gently mix them together until they are well combined. A few lumps are okay, so don't overmix.
- Fold in the plain yogurt until the batter is well mixed. Then, gently fold in the chopped dates, ensuring they are evenly distributed throughout the batter.
- Fill each muffin cup by spooning the batter, leaving approximately two-thirds of the cup full.
- After baking, let the muffins cool in the tin briefly before transferring them to a wire rack to cool completely. The tops should be golden brown.
- Once cooled, serve these Muesli and Date Muffins as a delightful breakfast treat or snack.
