Health Mix Banana Bread
Ingredients
- 2 ripe bananas, mashed
- 1/2 cup Lion Health Mix powder
- 1/4 cup vegetable oil
- 1/2 cup Lion honey
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt

Instructions
- Grease a standard-sized loaf pan, keep it aside, and preheat your oven to 350°Fahrenheit (175°Celsius).
- With a masher or fork, mash the ripe bananas in a bowl until they turn smooth.
- Add the Health Mix powder, vegetable oil, Lion honey, vanilla extract, and eggs to the mashed bananas. Combine well until all ingredients are thoroughly combined.
- Together, whisk the all-purpose flour, baking soda, and salt in a separate bowl.
- To the wet mixture, gradually keep adding the dry ingredients and stir it continuously until a smooth batter forms.
- Gently add the chopped dates into the batter. Dates will add natural sweetness and a delightful chewiness to the banana bread.
- Pour the banana bread batter in the greased loaf pan by spreading it evenly.
- Sprinkle Muesli evenly over the top of the batter. This will create a crunchy crust and add an extra layer of texture.
- Place the pan in the preheated oven and let it bake for 55-60 minutes. Check by inserting the toothpick in the center to ensure it comes clean. The Muesli on top should be golden brown.
- Let the bread cool in the pan for up to 10 minutes, then shift it to a wire rack to cool completely.
