Ingredients

  • 1 cup Lion Qyno Deseeded Dates
  • 2 tbsp Lion Dates Paste
  • ½ cup rolled oats
  • ¼ cup desiccated coconut (+ extra for rolling)
  • 2 tbsp almond butter or peanut butter
  • 1 tbsp cocoa powder (optional)
  • A pinch of sea salt

Step-by-Step Instructions

  1. Blend dates: Add deseeded dates and dates paste to a food processor. Blend until a sticky paste forms.
  2. Add remaining ingredients: Add oats, coconut, nut butter, cocoa powder, and salt. Pulse until combined.
  3. Check consistency: The mixture should hold together when pressed. If too dry, add 1 tsp water.
  4. Roll into balls: Scoop tablespoon-sized portions and roll into balls with your hands.
  5. Coat: Roll each ball in desiccated coconut.
  6. Refrigerate: Chill for 30 minutes before serving. Store in the fridge for up to 2 weeks.
