Date & Chia Seed Pudding!

This isn't your average pudding! This power-packed breakfast (or anytime!) treat is packed with gut-loving fiber and healthy fats, making it a delicious way to support a happy digestive system. Dates provide natural sweetness and prebiotics, while chia seeds are loaded with fiber and omega-3s – a winning combination for promoting gut health and keeping you feeling satisfied.

 

  • 1/4 cup Chia Seeds
  • 1 cup Unsweetened Almond Milk (plant-based milk of your choice)
  • 3-4 Lion Desert King Dates, pitted and chopped
  • 1/2 tsp Lion Dates Syrup
  • 1/4 tsp Ground Cinnamon
  • Pinch of Sea Salt
  • 1/4 tsp Nutmeg (optional)
  • Toppings (optional): Fresh berries, chopped nuts, granola, shredded coconut
  • Calories: 250-300
  • Carbohydrates: 30-35g
  • Protein: 4-5g
  • Fat: 10-15g (healthy fats from chia seeds)
  • Fiber: 10-12g
  • Sugar: 20-25g (natural sugars from dates)
  1. In a small jar or container, combine chia seeds, almond milk, chopped dates, vanilla extract (if using), cinnamon, and sea salt.
  2. Stir well to combine and ensure all chia seeds are coated.
  3. Cover the jar and let it get refrigerated for at least 4 hours, or preferably overnight and allow the seeds to absorb the liquid and thicken.
  4. Once set, stir the pudding well before serving.
  5. Top with your favorite ingredients, such as fresh berries, chopped nuts, granola, or shredded coconut (all optional).
