Date Cake with Lion Royal Dates

For the cake:

  • 1 ½ cups water
  • 1 ½ cups raisins
  • ¾ cup dates chopped
  • ½ cup butter
  • 2 eggs
  • 3/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 ½ cups all-purpose flour
  • 1/4 teaspoon salt
  • For the seasoning:
  • 4 tablespoons butter
  • ½ cup brown sugar
  • 2 tablespoons heavy cream
  • ½ cup chopped walnuts

The prep step: Begin by pre-heating the oven at 350°F (175°C) . Take a 7-inch square pan and grease it and get it floured. (Incase you are using a pressure cooker make sure to use a 9-invh square pan as the batter might overflow)

  1. Add water and raisins to a saucepan. Cook for 5 minutes once it comes to a boil, add chopped dates and baking soda to the hot mixture, then remove from heat. Let it cool down for the moment.
  2. Whip half a cup of butter along with a cup white sugar in a large bowl until light and fluffy. Now add the vanilla and stir in one egg at a time. Finally add the date mixture to the flour and salt. Now fill this wholesome filling in the prepared pan. (* Just in case you forgot just like us, it was the first thing that we did*)
  3. Now, bake for 45 minutes in the preheated oven, How to find out if the cake is baked? Simple, use toothpick and pick the cake, if the inserted toothpick comes out clean, then congrats! your cake is baked. You can now remove the cake and set the oven to broil.
  4. Finally, for the toppings, let's melt 4 tablespoons of butter in a saucepan. Brown sugar, cream, and chopped nuts should be added. Spread mixture over warm cake, about 3 minutes under broiler until lightly browned. It burns quickly and easily under the broiler, so watch carefully. Before serving, let it cool down.

Alternative: Do you find oven over-rated? Well, you can make this cake with your pressure cooker.

For the pre heating:

Take a pressure cooker, add some rock salt at the bottom, place a plate above the salt and above the plate place a ring or hot pot stand. Make sure to remove the weight and casket from the lid. Cover the lid and heat the cooker for 10-15 mins.

For the baking:

Make sure to bake the cake for 50-60 minutes and use the same toothpick method to check if the cake is cooked."
