Date and Muesli Pancakes (Breakfast)
This recipe adds chopped dates and muesli to pancake batter for a fun twist on a classic breakfast dish.
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 egg, beaten
- 1/4 cup chopped & pitted Lion Diamond Dates
- 1/4 cup Lion Muesli
- Oil or butter for cooking
- Gather your dry ingredients: In a spacious bowl, combine all-purpose flour, sugar, baking powder, and a pinch of salt.
- Whisk the wet companions: In a separate bowl, create a smooth mixture by whisking milk and a beaten egg together.
- Mix the wet and dry ingredients: Gently pour the wet ingredients into the dry bowl. Use a whisk to combine everything, but stop as soon as there are no more streaks of flour. Overmixing makes pancakes tough!
- Introduce the sweet and nutty elements: Gently fold in the chopped dates and the rolled oats from your muesli mix. These will add bursts of sweetness and texture to your pancakes.
- Heat up your cooking station: Get your pan nice and hot over medium heat. Add a thin layer of oil to prevent sticking.
