Date and Muesli Pancakes (Breakfast)

This recipe adds chopped dates and muesli to pancake batter for a fun twist on a classic breakfast dish.

 

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg, beaten
  • 1/4 cup chopped & pitted Lion Diamond Dates
  • 1/4 cup Lion Muesli
  • Oil or butter for cooking
  1. Gather your dry ingredients: In a spacious bowl, combine all-purpose flour, sugar, baking powder, and a pinch of salt.
  2. Whisk the wet companions: In a separate bowl, create a smooth mixture by whisking milk and a beaten egg together.
  3. Mix the wet and dry ingredients: Gently pour the wet ingredients into the dry bowl. Use a whisk to combine everything, but stop as soon as there are no more streaks of flour. Overmixing makes pancakes tough!
  4. Introduce the sweet and nutty elements: Gently fold in the chopped dates and the rolled oats from your muesli mix. These will add bursts of sweetness and texture to your pancakes.
  5. Heat up your cooking station: Get your pan nice and hot over medium heat. Add a thin layer of oil to prevent sticking.
  6. Shape and cook the pancakes: Pour about 1/4 cup pancake batter for each onto the hot griddle. Cook for 2-3 minutes per side, looking for a golden brown color that signifies they're cooked through.
