Date and Cashew Chutney (condiment)
This flavorful chutney is a delicious accompaniment to Indian flatbreads like roti or paratha. It can also be used as a dip for vegetables, crackers, and rice paper rolls.
- 1 cup Qyno Deseeded Dates
- 1/2 cup Salt Roasted Cashews
- 1/4 cup chopped red onion
- 1 tbsp lemon juice
- 1-inch of ginger, grated
- 1/2 tsp ground cumin
- 1/4 tsp chilli powder (adjust according to spice preference)
- Salt to taste
- In a food processor, combine pitted dates, raw cashews, chopped red onion, lemon juice, grated ginger, ground cumin, chilli powder, and salt.
- Process until a coarse paste forms. Scrape down the sides of the food processor as needed.
- Adjust seasonings with additional lemon juice, salt, or chilli powder as desired.
- Serve immediately or store in a tight container in the refrigerator for up to 5 days.
