Coconut Date Balls with Lion Desert Queen Dates
Coconut date balls are a simple, tasty, and healthy vegan recipe that are made with dates, nuts, and shredded coconut. They're tiny balls of nutrition!
- 2 eggs, beaten
- 1 cup white sugar
- 1 cup chopped dates
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- 3 cups crispy rice cereal
- 1 cup flaked coconut
- Combine the beaten eggs, sugar, and dates in a medium size saucepan and heat it over in moderate heat. Bring it to a boil for 5 minutes, make sure to stir occasionally.
- Once boiled remove it from the heat and add the butter and vanilla extract and stir well.
- Add crispy rice cereal to the mix.
- Butter your hands and roll the mixture into walnut-sized balls. Finish it off by rolling the balls in coconut
