Dates Cake with Cashews | Dessert Lovers | Must-try

Ingredients:

  1. 1 cup Qyno Deseeded Dates
  2. 1/3 cup milk
  3. 1/3 cup sugar
  4. 1 tbsp water
  5. 2 eggs
  6. 3 tbsp sugar
  7. 1/4 cup oil
  8. 1 cup flour
  9. 1 tsp baking powder
  10. 1/2 tsp baking soda
  11. ½ cup cashew nuts & sliced almonds
  12. 1/2 cup water

Instructions:

  1. Remove the seeds of dates and soak them in milk for 10-15 minutes. 
  2. In a pan, add 1/3 cup sugar and 1 tbsp water. Cook until caramelized.
  3. Add 1/2 cup water to the caramelized syrup and keep it aside.
  4. Blend the soaked dates and milk mixture until it turns smooth.
  5. Add the caramel to the blender and mix well.
  6. In a separate bowl, beat 2 eggs for 1 minute and add 3 tbsp sugar. Beat until fluffy.
  7. Add 1/4 cup oil and the date-caramel mixture to the egg mixture. Mix well.
  8. In the other bowl, add 1 cup flour, 1 tsp baking powder & 1/2 tsp baking soda. Mix well.
  9. Add the mixed ingredients to the wet ingredients and mix well.
  10. Add 3 tbsp cashew nuts to the batter and mix well.
  11. Grease a 6-inch mould with oil and pour the batter into it. Add some cashew nuts on top.
  12. Place the pan on the stove and preheat it for 5-6 minutes.
  13. Place the mould into the pan and cook it on low-medium flame for 35 to 40 minutes.
  14. If you are using an oven, preheat it for over 35 minutes and bake the cake at 180 degrees Celsius.
  15. Once done, leave the cake until it reaches room temperature.
  16. Cut the cake into small pieces and enjoy!
