Ingredients
For the Pudding:
- 1 cup Lion Qyno Deseeded Dates, soaked in ¾ cup boiling water for 15 mins
- 1 cup whole wheat flour
- 2 eggs
- 3 tbsp Lion Dates Paste
- 3 tbsp butter (melted)
- 1 tsp baking soda
- 1 tsp vanilla extract
For the Dates Toffee Sauce:
- 4 tbsp Lion Dates Syrup
- 3 tbsp butter
- ¼ cup cream
- ½ tsp cardamom powder
Step-by-Step Instructions
- Preheat oven to 180°C (350°F). Grease a baking dish.
- Blend dates: Blend soaked dates with their water until smooth.
- Mix batter: Whisk eggs, melted butter, dates paste, and vanilla. Fold in blended dates, flour, and baking soda.
- Bake: Pour into the baking dish and bake for 25–30 minutes until set.
- Make sauce: In a saucepan, melt butter, add dates syrup, cream, and cardamom. Simmer for 3–4 minutes until slightly thickened.
- Serve: Pour warm toffee sauce over the pudding and serve immediately with ice cream.
