Ingredients

  • 1.5 cups Lion Qyno Deseeded Dates, soaked in 1 cup warm water for 30 mins
  • 3 tbsp Lion Dates Paste
  • 1.5 cups whole wheat flour (or all-purpose flour)
  • 2 eggs (or flax eggs for vegan)
  • ½ cup butter or coconut oil (melted)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp cinnamon powder
  • ½ cup chopped walnuts or almonds

Step-by-Step Instructions

  1. Preheat oven to 180°C (350°F). Grease a 9-inch cake tin.
  2. Blend dates: Blend soaked dates with their soaking water until smooth.
  3. Mix wet ingredients: In a bowl, whisk eggs, melted butter, dates paste, vanilla, and blended dates.
  4. Add dry ingredients: Fold in flour, baking soda, and cinnamon until just combined. Do not overmix.
  5. Add nuts: Fold in chopped walnuts.
  6. Bake: Pour into the prepared tin and bake for 35–40 minutes until a toothpick comes out clean.
  7. Cool & serve: Cool for 10 minutes before slicing. Drizzle with Lion Dates Syrup for extra indulgence.
